Although Monica has always had a desire to be fit and eat well, she had to learn to prepare gluten-free and dairy-free food when all three of her children were diagnosed with Celiac Disease (and one with Type 1 Diabetes) in 2000-2001. (Read more about her son Blake and his battle with Celiac in this Oregon Live Article.)
Other allergies and medical conditions have followed, so she took a positive approach and learned all she could to help her family thrive. By volunteering with the Gluten Intolerance Group, American Diabetes Association, Gales Creek Camp for Kids with Diabetes, Oregon Food Bank, and Hillsboro Senior Center, Monica found her life’s work through helping others.
Monica earned her B.S. in Nutrition Science, is a Sports Nutrition Specialist, and Certified Corporate Wellness Coach.
